Happy Monday babes! As you know, I am still on this plant based way of eating. I am exploring fun, satisfying ways to continue to eat the things I loved before in a little bit of a healthier way. If you know me then you know I am a major sushi lover. I literally could live on it and be happy forever. But even before I went plant based, Darin and I were limiting our raw fish because there were so many parasites being found in our fish lately. Like I mentioned in my last post, if I crave fish I will still eat it but I will make sure it is wild and cooked.
I made this vegan sushi bowl with quinoa the other night and both Darin and I freaked for it! It is so easy to make and sooooo good!!
What you need:
- quinoa or brown rice
- 2 tbs avocado oil
- 2 tbs low sodium tamari
- 2 tbs rice vinegar
- 2 tsp sesame oil
- grated ginger
- Mix all ingredients of the sauce together in a bowl and set aside
- Combine diced carrots, cucumber, avocado, edamame and seaweed in a bowl over your choice of brown rice or quinoa
- Pour on desired amount of sauce
- ENJOY!! How easy is that??
